Leauf was founded by two friends with one shared obsession: the perfect sandwich.

Gijs sharpened his skills in some of the Netherlands’ best kitchens. After years of working as a chef in fine dining and Michelin-starred restaurants, he knew one thing for sure: good food doesn’t have to be complicated, but it does have to be done right. Fresh produce, bold flavors, and the kind of balance that makes every bite unforgettable.

Mats grew up surrounded by hospitality. With a father who worked as a chef and years of experience in bustling bars and restaurants, he understood what makes people feel at home. For him, it’s not just about food; it’s about creating a space where people want to return, a place that feels like part of the neighborhood.

Together, they dreamed up Leauf: a sandwich shop that blends Gijs’s culinary precision with Mats’s love for people and atmosphere. The result? Sandwiches that are bold yet simple, made with seasonal ingredients, house-made spreads (never from a jar), and bread that actually makes the filling shine.

But Leauf is more than just food. It’s about community. Every month, the menu shifts with the seasons, keeping things fresh, exciting, and always worth coming back for. From locals grabbing their daily lunch to visitors discovering their new favorite spot, Leauf has quickly grown into a community.
